Peach Salsa

Peach Salsa

Enjoy this recipe as we celebrate peppers (Capsicum spp.) as the 2016 Herb of the Year.

1½ c coarsely chopped peaches                              ½ c chopped red bell pepper
1 c coarsely chopped honeydew                             2 T snipped fresh cilantro
1 or 2 medium jalapeno peppers, seeded, finely chopped
juice of 1 lime, about 2 T
1 c coarsely chopped fresh pineapple                   2 t sugar
¼ t salt

Combine ingredients.
Let salsa set at least 1 hour.
Serve with tortilla chips.
Yum!
